You should know this pie is not for you if you're restricting sugar, dairy, eggs, or nuts along with your gluten free diet. Its first three ingredients are heavy whipping cream, evaporated milk, and sugar. Let that be a warning: even though it's called a gluten free DIET, you're not going to lose weight unless you also cut out a bunch of other stuff. And exercise, probably.
But back to the pie. Did I mention it was heavenly? The crust was made, perhaps by angels, with ground almonds (and I'm guessing a pound of butter and sugar). It added an unexpected, subtle amaretto flavor to the rich coconut cream filling, and a slightly gritty but not unpleasant marzipan-like finish. The whole thing, which I wolfed down in 5 minutes, (hey, it's a MINI pie) was nothing but pure sweetness and light and the embodiment of all that is good and holy in this world. It was the perfect antidote to my crappy Monday mood, and it totally hijacked this blog post, which was going to be all about how Earth Fare is the most fun place to do your GF grocery shopping. But you can totally see why it is now, can't you? They have this pie! And a loads of other stuff! But, THIS PIE. I strongly suggest you go get one. You never know when you might need it.
